Grill Concepts


THE BRANDING IRON
This Grill concept is designed for small footprint operations or facilities that do a large volume in a short period of time. The Branding Iron offers high quality burgers, chicken sandwiches and fries in a quick and easy manner. Burgers, sandwiches, and sides are pre-wrapped/pre-portioned for quick service so as to meet the need of time-sensitive consumers. A core condiment island is adjacent to this concept. All paper products meet the environmental mission of Guest Services.

 


METRO CITY GRILL
The old fashioned burger just got a face lift. Metro City Grill is all about juicy, grilled flavor that brings true sizzle to the common burger. 

This Grill concept is the most common in our portfolio. It is our mid-tier grill concept featuring locally sourced USDA ground beef, a flour dusted brioche bun, and hand-cut fries cooked in zero trans-fat canola oil. A hot toppers bar anchors the station that includes bacon, sautéed onions, mushrooms, peppers, and a variety of sauces and chili with which to top the sandwich. An island condiment bar is adjacent to the station with an up-scale selection of toppers to enhance the bar. Paper products at this station are green.


FJUZ BURGER
Pronounced fuse…meaning a mix of flavor-driving elements.

We start with 100% USDA all-natural, grass-fed, free-range beef. We hand craft our burgers by mixing natural, healthful, and flavor elements together to create a BIG flavor burger experience. Our customer makes a burger selection. The chef then grills the burger on our smoking hot griddle to lock in the natural juices. Each burger is served on house baked toasted brioche or a whole grain bun. Avoiding bread? Try your burger wrapped in crisp lettuce instead!

Potatoes: We complement our burgers with select russet potatoes, which are hand-cut on premise and blanched in all-natural, heart-healthy olive oil.
Our burger condiment station includes items such as organic catsup, stone-ground mustard and creamy trans-fat free mayonnaise, as well as a variety of local and sustainable produce.
 

Sandwich Concepts


WEDGE
How do you answer the call for a quick bite that speaks old-world quality? The Wedge! You’ll find layers of delicacies such as prosciutto, Genoa salami, pepperoni, ham, cheese, peppers, onions, tomatoes, olive oil and herbs, and thin slices of smoked turkey, sautéed mushrooms and melted Swiss cheese, all piled high on artisan breads. We slice and serve by the wedge for you to enjoy as is -- the beauty is that you can take as many as you like to suit your appetite. Also, we have a rotating grinder menu:  your sandwich is heated to order and served toasty and oozing with cheese.

Wedge salads, homemade wedge cookies, and True Brew Coffee round off this à la carte menu program.


EURORAP
Simple, fresh, flavorful, custom, hand-crafted and delicious! These are all words that sum up EuroRap. As you approach the station you are drawn in by that fire engine red European slicer. This slicer is hand cranked to thinly slice artisan meats (which the Italians refer to as Salumi). Imagine the simple flavors of the European Marché (marketplace ingredients) encased in fresh Lavosh. 

Lavosh is a soft, thin unleavened flatbread. Today, it is the bread most widely used throughout the region. Here we offer a large variety of European-style deli meats, cheeses, and fresh vegetables to build a roll-up of healthy European flavors. This handheld delight is created by YOU. We call this B.Y.O.R. (build your own rap); you choose ingredients such as sustainable white tuna, Parma ham, salami, Capicola, or country pâté, which we layer with components such as capers, cornichons, Dijon mustard, roasted peppers, forest mushrooms, caramelized onions, crisp apples, red cabbage, and a variety of cheeses, enhanced with a simple drizzle of olive oil or sprinkling of freshly grated parmesan.

We offer a selection of healthy fruit and grain salad sides such as wild rice salad with dried cherries and almonds, or quinoa and black barley with Romano and baby spinach to complement your wrap.

VI – An Asian Sub Shop
This concept is all about the famous Vietnamese baguette sandwich, called Bánh Mi. It has attracted such a loyal fan base you would think it was a rock star. Like a musical band with rock star status, these sandwiches have a tremendous following of epicurean devotees. The uniqueness of these sandwiches not only lie within the French influenced baguette, but it’s also the flavor packed, savory Viet fillings that makes the marriage of the two main ingredients a true love affair.

It starts with a French baguette. Inside the length of the cut baguette is luscious, Viet flavored fillings such as honey grilled pork, ginger garlic chicken, sesame chicken, roast beef, or Saigon bacon. There are also cold cut combinations like sliced deli meats (salami, ham, and turkey), chilled grilled chicken, and vegetarian – these however are just a sampling of the plethora of possibilities.
Other ingredients used to finish the sandwich are: mayo, pate, touch of soy sauce, shredded pickled carrots & daikon, fresh cilantro, fresh basil, jalapeño slices, and crispy cucumber. Any of these condiments may be omitted since, Bánh mi are always made to order. Have it your way and it’s a flavor infused sub you will never forget.

Nature's Table
Raising the Salad Bar…. If you were to pick just one word to describe Nature’s Table it would be “Balance.” Whether it’s cool, vibrant healthful salads in the summer or olive-infused winter grain and rice salads, you’ve got a winner; and the best thing about Nature’s Table is you can make your own and that is the best way to kick up your wellness meter. Nature’s Table is more than satisfying...it’s healthy!



Given customers’ growing enthusiasm for ethnic flavors, Guest Services believes it is time to rethink the salad repertoire. Salad sets the tone for the meal. Yet, in too many operations the salad bar offers only the usual suspects with no sign of the chef’s creativity or imagination.

The Mediterranean region offers a wealth of ideas for salads. Drawing from the antipasti tradition of Italy, the tapas of Spain, the hors d’oeuvres of France, and the meze table of Greece, Turkey and the Middle East, we have elevated the salad bar and made it a drawing card.

Our Mediterranean salads fall into the following categories.

  • Bean salads (chickpeas, fava beans, white beans and lentils.)
  • Grain and bread salads (rice, cracked wheat, bulgur or farro.)
  • Chopped salads (Flavors from Turkey, Syria, Lebanon, Morocco, Spain and Israel)
  • Fruit salads (fresh, zesty, fruit-based salads found all over the Mediterranean).)
  • Cooked vegetable salads: (Composed salads galore, made with potatoes, fennel, green beans, beets, roasted peppers.)

Heritage Concepts


Sweet Biscuits
As our nation’s dish of choice, fried chicken outpaces the burger and out-souls the pizza pie, and if America’s sweetheart dish is apple pie, its savory counterpart is most certainly fried chicken. Sweet Biscuits is all about Fried Chicken. A piping-hot platter of floured-and-fried chicken is the granddaddy of foods. Golden breading, flavor-packed skin, and fall-off-the-bone meat—this is the workingman’s filet mignon. Brought over by British pilgrims, and seasoned to higher stature by African American cooks in the Deep South, fried chicken has its origin in country kitchens. But to say refined gourmands don’t relish a steaming bowl of drumsticks is foolish.
Sweet Biscuits distinguishes itself with a unique "Old South" style menu that features spicy chicken, chicken sandwiches, chicken tenders, fried shrimp, red beans and rice and other regional items. Sweet Biscuits has a passion for its Southern heritage and flavorful authentic food.

 

 World Cuisine Concepts
 

SÔNG
Taste the authentic, fresh flavors of China, Korea, Malaysia, Thailand and Vietnam at SÔNG (pronounced shoong…meaning “river,” ever-flowing abundance.) Our menu features include the Asian version of "small bites," Dim Sum, fresh cool salads, and stir frys. SÔNG is a station that reflects the demands, flavors, needs, and tastes of today’s consumer. It is a buffet concept that features more than 100 menu options from which to select – and greater variety means greater value for our customers. This buffet concept has four core components:

  • A Hot Bar featuring food and flavors from across the Far East, and around the world
  • An American Comfort Bar featuring down-home regional favorites
  • A Whole Earth Salad Buffet featuring a wide variety of freshly prepared composed salads
  • A Nature’s Table Salad Buffet featuring salad bar classics, fresh fruits, and farm fresh vegetables.

During tough economic times, trends have shown how important variety and value are to consumers, yet good value does not mean they want to sacrifice flavor and taste. Our grazing menu experience is all about flavorful value that gives our customers the freedom to select from a wide array of choices.

This station is designed to showcase the simple elements of flavor from America’s great agricultural landscape. Our buffet program is priced for fast grab and go service. Our customers control not only the dishes they select but their portion size and the price they pay (all items are sold by the pound). And it’s healthy, too - Infused into the food bar are Healthy Menu options…

  • Low fat options
  • Low carb options
  • Healthy Course selections
  • Zero trans fat oils
  • No added MSG
  • An abundance of fresh fruits and vegetables

This station also will serve a bountiful breakfast buffet. 

 

Noodles
Noodles, noodles, noodles. The world is in love with noodles. We have Ramen from Japan, Pho and Mien Ga from Vietnam, Curry Coconut Broth from Thailand, and Sar Hor from Malaysia. Simply, think of health and wisdom in a bowl. This station is sure to be a favorite.

Pho - Think of health and wisdom in a bowl: This is noodles to the nth degree. Two core components make this noodle bowl a winner: the warmth and comfort of a variety of Asian noodles married with savory Asian broths of chicken, vegetable, or beef and finished with toppings you have selected such as bean sprouts, cilantro, fresh basil, lime wedges, sliced chilies, and crispy onions. Of course, Hoisin and soy sauces are available on the side to satisfy the most demanding palate, as are our signature Wild Ginger beverages.
This is a “build your own” noodle bowl concept where the fragrance and flavor of hearty broths such as Ramen Chicken, Red Miso, and Pho Beef Broth is enhanced with assorted Asian noodles…then kicked up with shredded beef, chicken or tofu and a bountiful array of Asian ingredients such as bok choy, bean sprouts, carrot, sugar snap peas, napa cabbage, sweet onion, edamame, Thai basil, cilantro, Thai chili, lime, and crisp fried shallots, hoisin sauce and Sriracha.

The Noodle Bar is priced by the bowl.

 

Q–Beyond the Barbie
Smell and savor the sizzle of international BBQ as our chef prepares flame-kissed strips of Korean marinated short ribs, tandoori spiced chicken, or mojo roasted pork. This station is all about the Q – co-mingled with the flavors of the rub and the sauce; we have trapped the elements of fire and BBQ from around the world. The grill is the showcase. Here, the fat melts off and the sugars caramelize to create that soft, tender texture and deep savory flavor of true BBQ food…kicked up by the ethnic sauce fusions that span the globe. Accompaniments rotate based on the ethnic flavor of the day.

We use only 100% USDA all natural beef, all natural chicken and sustainable pork.

 

Olives
What happens when you blend the rustic flavors of the Italian countryside with the fun food fusions of a of a California metro kitchen? In a word: delizioso – an experience that can only be tasted. Our signature dough creates magic in your mouth; all our pizzas are made in the old world tradition with new world flavor.

Everything about Olives pizzas, from the oval shape (18”x9”) of our gourmet pizzas to our signature personal pies (6”x9”), is far from ordinary. We use only the freshest, all-natural and organic ingredients, like all-natural chicken, sausages, meatballs and more. Our trademark pizza sauce uses 100% organic tomatoes, with only the
simplest ingredients to round off the flavor - like garlic, basil, oregano, cane sugar, olive oil and our “secret” blend of herbs and spices. We also serve our specialty made-to-order pastas.

 
Qi Bao
This Asian station can be wrapped up in three words: Health, Life, and Nutrition. Asia sets the backdrop to a contemporary lifestyle cuisine promoting a long, healthful life – its offerings call to mind buzz words like sustainability, balance, wellness, and energy. You build your own bowl and simply tell the wok chef weather you would like Pho or Wok; the chef will then prepare your dish to order.

Wok - Wok this way to great Asian stir-fry. These dishes are all about the wok, where our talented wok chef prepares fresh, flavorful Asian cuisine by stir-frying farm-fresh vegetables that you have selected with signature sauces and Asian seasonings to perfection. You pick the protein and sauce and our chef creates the magic.

Bao (Steamed Buns) – A Dim Sum tradition. Chinese steamed dumplings are a must-have for a flavorful, healthy bite. Old-fashioned yeast dough filled with tasty meat and vegetable combinations steamed to create an irresistible, soft and chewy, hot Asian bun.

 

Tejas serves awesome southwestern fare, with a special appreciation for the form and function of the tortilla. We take fresh, all natural chicken marinated in a special recipe of herbs, spices and citrus juices. Then we skewer and slow-roast the marinated chicken over hot embers, hand cut it, and serve it as just one of several savory fillings for your “Dos Manos” (meaning two-handed) burrito, or serve it hot with warm tortillas and a wide assortment of side dishes.

Rounding out the menu are fresh flavorful hot burrito fillers inspired by the kitchens of Mexico, including Carnitas, Carne Asada, and Muchacha (shredded spiced beef). We also offer our Signature Crunch Burritos, Tortilla-Free Burrito Bowls, Taco Salads, Tacos al Carbon and Quesadillas. And, of course, there is the fresh salsa bar featuring our famous House Salsa, alongside our Avocado, Chipotle and Pico de Gallo salsas. All are freshly made. Welcome to the best southwestern food you’ve ever put in your face.

Thrive
Creative artisan sandwiches and salads using local or sustainable ingredients and wholesome breads are conveniently available for our guests on the go. You’ll also find fast, healthy snack foods such as fresh-cut seasonal fruit cups topped with lowfat yogurt, flavorful parfaits, Mediterranean snack packs, and Healthy Course options with less than 200 calories per snack. All menu items tie directly into the Web Ordering menu, should this program be offered.

We’ll be offering natural and organic pre-packaged snacks and candies, and organic nuts and granola mixes bythe-
ounce at Thrive, our “organic to go” station.
